Physical properties
Rice protein peptide is a fine, off-white to milky white powder or granular product. It possesses a light, characteristic rice aroma, with no bitter taste or only a faint rice-like flavor, offering a mild mouthfeel. It is readily soluble in water, forming a clear and transparent solution, with faster dissolution in hot water. It is insoluble in organic solvents such as ethanol and diethyl ether. It exhibits strong hygroscopicity and tends to agglomerate in humid environments, thus requiring storage in sealed, dry conditions.
